Tzatziki is a Greek dish that is equally great as an appetizer when served with pita, or as a side dish with rice pilaf, veggies or meat. It’s also fantastic as a dip for Zucchini Latkes as part of a healthy Chanukah meal.
1 cup plain yogurt – Preferably homemade, or store bought Greek yogurt
1 cucumber – diced, salted, squeezed, and drained to eliminate excess water
1 tablespoon olive oil
juice of 1/2 lemon
1-1/2 teaspoons chopped fresh dill
1-1/2 cloves garlic, peeled
5 mint leaves chopped fine
salt and pepper to taste
